Concorde pears originated in England as a cross between the Conference and Comice pear varieties. They have the same long, slender neck as Conference with the sweet and juicy flavor of Comice. Concorde pears do not dramatically change color as they ripen, therefore it is best to test the pear for ripeness daily. Concorde’s dense flesh and ability to hold its shape and flavor makes it a great choice for cooking. Concorde pears are also very slow to oxidize, or turn brown, when cut.
