Back to school season is upon us which means it’s time to refresh your snack ideas in order to making packing your child’s lunch easy. I’ve personally been faced with packing kid lunches as of late and know it can be a challenge to not be repetitive with what you serve each day. It’s hard to believe that another summer has come to an end and it’s time for kids to go back to school. Whether you pack your child’s lunch, send snacks or are in need of an after-school treat, these simple sweet apple chips featuring Stemilt’s Lil Snappers Gala Apples can be made in advanced, and quickly tucked into lunch boxes or stashed in a purse on the way out the door.

Lil Snappers are a mainstay in our house because they’re the perfect size for Ellie and Frances’s little hands and stomachs. The sweet flavor and crispy texture of Gala apples make these particular Lil Snappers ideal for slicing thin and dehydrating to make apple chips. If you buy apple chips in the store, you’ll often find many additional ingredients listed beyond just apples. When you make your own, you’re guaranteed fresh and delicious!

Since we’re a family of “dippers,” I’ll usually concoct some type of dip to go along with the apple chips. I’ve played around with favorite flavors like peanut butter, vanilla, chocolate, and caramel but I find myself always coming back to peanut butter. On top of being a healthy source of fat, the natural peanut butter that I use is free from sugar and has both protein and fat to help keep us full from meal to meal. For a creamier dipping option with even more protein, I like to mix my peanut butter with plain Greek yogurt and then add a dash of cinnamon and honey. Check out the recipe below for one of my family’s favorite apple dips to pair with sweet cinnamon apple chips.

Apple Chips with Peanut Butter Yogurt Dip

Ingredients

  • 6 Lil Snappers Gala apples, stems removed
  • 2 tsp cinnamon
  • 6 tbsp plain Greek yogurt
  • 1 tbsp natural peanut butter
  • 1 tsp honey
  • 1/4 tsp cinnamon

These Cinnamon Apple Chips with Peanut Butter Yogurt Dip is a healthy, fun back-to-school treat that the kids will love!

Instructions

  1. Using a mandolin slicer, cut apples into 1/8-inch-thick slices. Depending on the exact size of apple, this should yield approximately 10 slices per apple.
  2. Arrange apple slices in rows on 2 parchment-lined cookie sheets. Make sure that apples do not overlap. Sprinkle evenly with cinnamon.
  3. Bake both cookie sheets together at 225° for 3 hours, turning once, until slices dehydrate and edges curl. Remove chips and cool on a baking rack for an hour. Store in an airtight container for up to two days.
  4. In a small bowl, combine Greek yogurt, peanut butter, and remaining ingredients. Stir until combined and smooth. Refrigerate until ready to serve.
