Classic Peach Cobbler

Ingredients

  • 8-10 large Artisan Organic Peaches (peeled and cut into thin wedges)
  • 1/4 cup sugar
  • 1 tbsp fresh lemon juice
  • 2 tsp cornstarch
  • 1 cup flour
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3/4 stick, cold, unsalted butter, cut into small pieces
  • 1/4 cup boiling water

Instructions

  1. Preheat oven to 425 degrees.
  2. Toss peaches with sugar, lemon juice and cornstarch in a 2 quart non-reactive baking dish and bake for 10 minutes.
  3. Make the topping while the peaches bake.
  4. Stir together flour, sugar, baking powder and salt.
  5. Blend in butter with a pastry blender until mixture resembles cornmeal.
  6. Stir in water until just combined.
  7. Remove peaches from oven and drop spoonfuls of topping over them.
  8. Bake in middle of oven until topping is golden, about 25 minutes.
