Quick Cherry Bread

I love bread. And I love cherries. And while I love both these items, I never thought I would enjoy both of these things together… until now. Say hello to this delicious Quick Cherry Bread featuring Stemilt’s World Famous dark-sweet cherries.

Our friend Chelsea, from A Duck’s Oven, is back once again with this bread recipe that is a great way to use cherries if you find yourself with a few too many and need to work fast to eat them. Freezing also works, but we suggest this bread instead because you get a tasty end result!

This Quick Cherry Bread doesn’t require any type of starter or yeast and only uses common ingredients that you can usually find in your pantry, no special store runs needed. Because it doesn’t need to rise, this bread is quick to make (hence the name) and a great recipe to recruit help from the kids, young or old! The young ones may enjoy eating cherries more than making the bread though!

Like other cherry recipes, it will require a little bit of cherry pitting. If you don’t have a cherry pitter readily available, no worries – we have gathered up a couple of different ways to pit cherries with common household items. After you have pit enough cherries, this recipe comes together very quickly! All that is required after pitting cherries in mixing together the ingredients and throwing it into the oven! Pretty simple, no tricky steps required.

After you bake this bread, you will find yourself going back for seconds and then maybe thirds… no, definitely thirds. This loaf is small (made in your typical loaf pan – 10in. x 5in.) but mighty in flavor and one we feel you won’t be able to get enough of! Ingredients

  • 1/4 cup butter, melted and cooled slightly
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 lemon, zested (about 1 tablespoon zest)
  • 3 tablespoons freshly squeezed lemon juice, from 1-2 lemons
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1 3/4 cup unbleached all-purpose flour
  • 3/4 cup chopped Stemilt World Famous dark-sweet pitted cherries, plus extra halves for the top of the bread

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Spray a 10”x5” loaf pan with cooking spray, line with parchment paper, and spray again.
  3. In the bowl of an electric mixer or using a handheld mixer, beat together butter and sugar. Add the eggs, one at a time, beating well after each addition.
  4. Add the vanilla extract, lemon juice, and lemon zest and mix well.
  5. Add the baking soda, baking powder, and kosher salt and mix until combined. Add the flour, a bit at a time, and beat until just mixed. Do not over mix.
  6. Fold in the ¾ cup of chopped cherries. Spoon the batter into the prepared loaf pan. Smooth the top with a spatula. Top with cherry halves.
  7. Bake in preheated oven for 40-45 minutes, or until a toothpick inserted in the middle comes out clean.
  8. Let cool completely before slicing and serving.
