Sliced Apple Boats

Ensuring your kids get a nice balance of fruits and veggies everyday can be a constant struggle. Coming from a family that could have easily been classified as “health-nuts,” I was raised to believe in the power of fruits and veggies. Now that I have a family of my own and my one-year-old is experimenting with different flavors, I am constantly searching for new snacking ideas that are healthy (so mom is happy) but that will also keep her satisfied (so baby is happy).

While she may not be ready for these apples boats for another year or so (and has more teeth to help her chomp), I am going to keep this recipe tucked into my back pocket because it’s that good. Honestly, it’s a recipe that my husband and I will snack on too when we are in need of something easy and quick. The beauty behind this recipe is that you can make it into anything you want it to be; sweet, savory or a combination of both.

Even though, the recipe listed below is pretty simple with only a couple of ingredients (we definitely believe in the less is more kind of thing), the concept of this snacking idea gives you endless possibilities. Anything from sliced nuts to cinnamon to yogurt chips could be added to these apple boats to get any flavor you are craving. You can also change up the apple variety and use a sweet or more tart apple, like Fuji, Gala, Honeycrisp, Rave®, Pink Lady®, or SweeTango®!

Not only does this recipe have so many flavor possibilities, it is also quick to prepare making it an easy after school snack. And if your kids are a little older and interested in preparing their own food, I can imagine they would have fun with the different types of toppings and sauces they could include!

While this may remind you a bit of apple nachos, the boat part is a nice compliment to the recipe as it allows you to add in granola or other ingredients that may not stick well to thinner apple slices. The boat acts like a scoop which allows for more substance in every bite!

Ingredients

  • 1 Stemilt Piñata® Apple
  • 1 cup granola
  • 1/2 cup peanut butter
  • Mini chocolate chips for topping

Instructions

  1. Slice apples into wide slices and carve a dip into the center of the apple slices.
  2. Fill the dip with granola.
  3. Heat peanut butter in microwave safe-bowl for 30-second intervals, stirring between intervals, until desired consistency
  4. Drizzle peanut butter over apple slices.
  5. Sprinkle with mini chocolate chips and serve
