When my diet starts to revolve around burgers, BBQ, slushies, cocktails, and ice cream in the summer months, that’s when I know it’s time to pull out those staple salad recipes to freshen it up.

It truly has been an odd start to summer for us Washingtonians, barbeques and evening pool parties are just over the horizon (I hope,) but we’ve hardly begun establishing our indulgent summer pallets. It must be a sign that it’s a good time to find our favorite salad recipes for when the heat does hit, and for when we need a refreshing change of simple, delicious, and vegetarian-friendly options.

Spiralized Apple Salad – This is no boring Caesar salad (no hate to Caesar salads, they’re a go-to of mine most time,) this is a flavorful creation of leafy butter lettuce, spiralized apples accompanied by walnuts and a tasty homemade dressing. The spiralizing of the apples can be a fun way to include your kids in the kitchen and get them excited for a salad that is unique.
