Healthy Cinco de Mayo Recipes

It’s almost Cinco de Mayo y’all! To be totally honest, I didn’t think much about Cinco de Mayo until I was a little older, but now it is one of my favorite holidays to celebrate. So, what is the reason for Cinco de Mayo? Well, Cinco de Mayo is the celebration of the Mexican victory over French forces at the Battle of Puebla on May 5, 1862. Today, it is one of the most celebrated holidays throughout Mexico. There are parades, music, folkloric dancing and of course, food! I believe the Hispanic culture has some of the best cuisine in the world – it’s fresh, flavorful and they created margaritas. With that, I have rounded up some of my favorite healthy Cinco de Mayo recipes for the upcoming holiday – check them out!

Grilled Shrimp Tostadas with Piñata® Apple & Mango Salsa – First of all, can you ever go wrong with tostadas? I highly doubt it. Chicken, Monterey Jack & Apple Quesadilla –  Seriously you guys. So far, every recipe I’ve listed is making my mouth water and this one is no different. Spice up a classic dish with some Pink Lady® apples! This easy-to-make recipe is perfect if you’re celebrating at home with the kiddos as they’re simple and you can whip up quite a few in no time at all. Sally from Real Mom Nutrition created this recipe and has added a lot of unique spins to give this dish that extra flavor blast you are looking for.
