I am a big advocate for finding healthier versions of comfort food. Everything from cauliflower pizza crust to spaghetti squash noodles – I’ve tried it. Even foods that tend to be my kryptonite – like chocolate chip cookies or ice cream – can sometimes find themselves being replaced by a healthier option.
Ice cream, for one, is a food group that I have a hard time giving up. In fact, when I was growing up, my family loved ice cream so much that it would last maybe a day and half before that gallon of Dreyer’s Cookie Dough was gone – which is why we only got it about once or twice a month.
Now, I try to find healthier options to help balance my indulgences, which is why I went on a quest for Peach “Nice Cream.” I decided to find something that tasted like ice cream, but didn’t contain as much of the bad stuff – like fats, sugars and high sodium levels – all while celebrating peaches, since August is National Peach Month.
All of Stemilt’s peaches are organic and come from our orchards down in south central Washington State. These Artisan Organics™ peaches have beautiful coloring, wonderful texture and the best flavors. Peaches are great for nice cream as they are a little more dense than other fruits, plus they freeze well (a crucial step in making nice cream). Peaches also come with many health benefits, including being a low-calorie flavorful snack with lots of vitamins.
This peach nice cream recipe is great because it doesn’t take much time and is fairly easy to make if you have a food processor or blender. Dice the peaches up first – no worries on being totally precise. They get blended up anyway. After the peaches are diced, add in a couple of dashes of nutmeg, lemon juice (to help with oxidation), ice, and a smidge of honey (if your peaches are still a little ripe and not super sweet). After you have all of these, blend, blend, blend until you get a smooth consistency. Once smooth, pour into a loaf-style pan and cover. Freeze for 3-4 hours or until desired firmness. The result will end up being more sorbet than creamy ice cream, but it tastes just as good and it’s good for the waistline.
