Instructions
- Preheat the oven to 375°F.
- Sauté the diced apple in the brown sugar, lemon juice and cinnamon until soft.
- Combine the coconut oil, almond butter, brown sugar, egg and vanilla.
- Stir in the flours, oats, spices, baking soda, baking powder, salt and pecans.
- Scoop into 12 large cookies; press flat and bake for 14 minutes.
