Apple Breakfast Cookies

Ingredients

  • 1 Piñata® apple, diced
  • 2 tbsp brown sugar
  • 1 tsp lemon juice
  • 1/2 tsp cinnamon
  • 1/2 c melted coconut oil
  • 1/3 c almond butter
  • 1/2 c brown sugar
  • 1 large egg
  • 1 tsp vanilla
  • 1 c flour
  • 3/4 c whole wheat flour
  • 3/4 c rolled oats
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ginger
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/3 c chopped pecans

These apple cookies are perfect for a convenient on-the-go breakfast.

Instructions

  1. Preheat the oven to 375°F.
  2. Sauté the diced apple in the brown sugar, lemon juice and cinnamon until soft.
  3. Combine the coconut oil, almond butter, brown sugar, egg and vanilla.
  4. Stir in the flours, oats, spices, baking soda, baking powder, salt and pecans.
  5. Scoop into 12 large cookies; press flat and bake for 14 minutes.
