Easy & Fresh Peach Jam

Ingredients

  • Fresh Artisan Organic peaches (peeled, pitted, and chopped- enough to make 12 cups)
  • 1-2 cups granulated sugar
  • 1-1.75 oz packet of pectin

Make this peach jam during the summer, but enjoy it any time.

Instructions

  1. Combine fruit, sugar to taste and water, if needed, in a large pan.
  2. Bring to a vigorous boil and crush fruit with a potato mash until desired consistency.
  3. Add pectin in a steady stream, stirring constantly.
  4. Stir until the pectin is dissolved.
  5. Bring to a full rolling boil (a boil that cannot be “stirred down”), stirring constantly.
  6. Boil, stirring for 1 minute. Remove from heat.
  7. Ladle the jam into clean canning jars to within 1/2 inch of rim.
  8. Wipe rims clean. Cover with lids.
  9. Let the jars stand at room temperature until set, about 24 hours, before freezing.
