Goat Cheese and Pear Kale Salad

Ingredients

  • Salad:
  • 1 chopped Stemilt d'Anjou or Bartlett pear
  • 5-6 cups of destemmed kale
  • 1/2 cup pomegranate seeds
  • 1/4 cup crumbled goat cheese
  • 1/2 cup almond slivers
  • 1/3 cup chopped red onion
  • Dressing:
  • 1/4 cup olive oil
  • 1 tbsp maple syrup
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 1 lemon juiced

Instructions

  1. Whisk together dressing ingredients and set aside.
  2. Massage kale with dressing until kale is broken down.
  3. Combine the kale, pears, pomegranate seeds, goat cheese, red onion, and almonds.
  4. Toss well. Refrigerate prior to serving.
