Oatmeal meets pancake in this delicious, filling square that you can bake for make-ahead breakfasts all week long or if you’re serving a group. Perfect served hot, room temperature, or even cold!

Our friend Chelsea Cole from A Duck’s Oven crafted this super simple breakfast (or snack!) featuring our delicious Cosmic Crisp® Apples. Juicy and sweet, these apples pair perfectly with hearty oatmeal. How to make these baked oats:

You’ll start by blending old-fashioned oats with milk, eggs, baking powder, and spices in your blender until smooth. We know: this is definitely a different oatmeal preparation! Trust the process.

Pour the batter you’ve made into a greased baking dish. Then you’ll dice a peeled and cored Cosmic Crisp® Apple and top the raw batter with the apples. Bake until the oats are golden brown, let cool, then cut into squares and serve or refrigerate for breakfast on the go later in the week.

Ingredients

  • 1 Stemilt Cosmic Crisp apple, peeled, cored, and diced
  • 1 cup of old fashioned oats
  • 1/2 cup of milk (any type)
  • 2 large eggs
  • 1/4 cup maple syrup
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • pinch of salt (optional)

Instructions

  1. Preheat your oven to 350 degrees F. Grease a 7.5”x6” baking dish.
  2. Add all ingredients to a blender except the apple. Blend until creamy and little to no chunks of the oats remain.
  3. Pour batter into the greased baking dish and evenly top with prepared apples. 
  4. Bake for 20-25 minutes or until a toothpick inserted in the middle comes out clean.
  5. Cut into squares and serve.
  6. Oatmeal can be refrigerated for up to 6 days and reheated or served cold.
