No Bake Cherry Bliss Balls

Calling all snackers and busy mamas! This recipe is for you. 

 I’m Kaleigh McMordie, a registered dietitian and food blogger at Lively Table, where I create nutritious, delicious recipes and inspire women to define health in their own terms. My husband and I just welcomed our first precious baby into the world a few weeks ago, and oh how my world has changed! Before baby, I spent time making meals and snacks that looked pretty and tasted amazing, not to mention were always very well balanced. Post baby? Not so much.  

 I always thought people were being dramatic when they said I’d never sleep, barely have time to feed myself, and might get a shower if I was lucky. Turns out they were right. Between feeding and caring for a newborn and trying to keep up with the endless amounts of laundry that seem to come with an infant, I usually have about 5 minutes to prepare meals now. And breastfeeding means I’m starving. All. The. Time.  

 Needless to say, I need nutritious snacks ready for me to grab at a moment’s notice to keep me going. Gone are the days of arranging beautifully cut fruit on top of yogurt with the perfect drizzle of nut butter (all in a real bowl!) when I wanted a snack. Now it’s all about quick and easy snacks, preferably that I can reach into the fridge for any time of the day and eat with one hand.  

 That’s why I’m obsessed with these no bake cherry bliss balls! They’re perfect for meal prepping so that I have nutritious snacks ready to eat in the fridge with absolutely no fuss. And I can pop one in my mouth while I’m carrying baby (or a breast pump) around.  

 These no bake cherry bliss balls! are made with no added sugar (except for in the chocolate chips if you use them) and nutritious ingredients like fresh dark sweet cherries, dates, almonds, oats, and cocoa powder. They’re full of fiber, healthy fat, plant protein, and antioxidants. Dark sweet cherries and cocoa are both incredible sources of antioxidants, while the mix of complex carbs, protein and healthy fat makes these energy bites the perfect snack to give you energy and keep you full and satisfied.  

 But most importantly, these no bake cherry bliss balls! are insanely delicious. They taste like decadent cherry dark chocolate brownies. Even I have a hard time believing they’re good for me when I bite into one! They are seriously that good.

Ingredients

  • 2/3 cup rolled oats
  • 3/4 cup almonds
  • 1/3 cup dates, pitted
  • 3/4 cup Stemilt dark sweet cherries, pitted
  • 1 tbsp dark unsweetened cocoa powder
  • 1 tbsp chia seeds
  • Pinch sea salt
  • 1/4 cup dark chocolate chips (optional)

Instructions

  1. In a food processor, pulse oats, almonds, and dates until they are finely chopped. This may take a few minutes. 
  2. Add cherries, cocoa powder, chia seeds and salt. Pulse until smooth. Stir in chocolate chips, (if using). 
  3. Scoop mixture and roll into 1-inch balls. You can oil your hands first to prevent sticking.
  4. Place balls on a baking sheet lined with parchment, wax paper, or a silicone baking mat. 
  5. Place in the refrigerator to harden slightly before storing. 
  6. Store in an airtight container in the refrigerator.
