Pancake Tacos featuring Stemilt SweeTango® Apples

While my girls are still toddlers, my husband and I have been trying hard to practice eating around the table to show them that it is a time to slow down, connect with each other, and reflect on our days as a family. While I hope to always continue this tradition into the future, especially as they get older, I know life will get busy. Even now when life is busy, we still make the effort to sit around the table together and fortunately for us, sometimes we get lucky enough to have it be both breakfast and dinner (but that is usually just on the weekend)!

On the weekends, when we do have the time to sit together, we always like to make a solid meal. My girls love to eat, so when we can, we like to start the mornings off with a solid breakfast. Fruit smoothies, yogurts, peanut butter and jelly sandwiches – you name it, they will eat it. One recipe we always love to whip on the weekends though is pancakes. Often times, I find myself making them different colors or we throw on various toppings like chocolate chips, nuts, bananas, or apples. We like to keep things fresh by trying new toppings, so when our friend Chelsea from A Duck’s Oven came up with this Pancake Taco idea featuring our SweeTango® apples (which, BTW are my favorite and so delicious), I was thrilled to give this recipe a shot.

Using SweeTango® apples, which are both sweet and tangy (hence the clever name), breakfast sausage and pancakes, this breakfast recipe has it all. Sweet, savory and delicious. First off, you have to cook the sausage over medium heat until it’s cooked through to your liking. After the sausage is cooked and put into a separate bowl, add the apples, water, brown sugar and cinnamon into a large skillet over medium heat until the mixture has thickened. It should only take 5-10 minutes. Next up, make the pancakes until the batter is gone. After everything is cooked, the assembly line can form. First dish your pancake, then spoon the apples and sausage onto the pancakes. Form into a taco shape, drizzle with maple syrup, and enjoy! I’m getting hungry just thinking about this recipe.

Pancake Tacos are simple, savory and delicious and we can’t wait to hear what you think of them. Pancake Tacos featuring Stemilt SweeTango® Apples

Ingredients

  • Caramelized Apples
  • 2 Stemilt SweeTango® Apples, peeled, cored, and sliced
  • 2 tbsp water
  • 2 tbsp brown sugar
  • 1 tsp cinnamon
  • Pancakes
  • 1 1/2 cups all-purpose flour
  • 1 tbsp white sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp kosher salt
  • 1/2 tsp ground cinnamon
  • 1 1/2 cups milk, room temperature
  • 1 egg, room temperature
  • 3 tbsp melted butter
  • Maple syrup, for serving

These Pancake Tacos are simple, savory, and sweet making them the perfect breakfast recipe for the family.

Instructions

  1. In a large skillet, brown the sausage over medium heat until dark brown and crispy. Drain and set aside.
  2. In a large skillet over medium-low heat, add the apples, water, brown sugar, and cinnamon.
  3. Cook, stirring occasionally, until the liquid has thickened and apples are soft, 5-8 minutes.
  4. Remove from heat and set aside.

To make pancake batter:

  1. Whick together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  2. Create a well in the middle and add the milk, egg, and melted butter.
  3. Whisk until no longer lumpy. The mixture should be thick but pourable, add more milk if needed.
  4. Set a large skillet over medium heat. Grease with nonstick cooking spray.
  5. Spoon about ⅓ cup of the batter into pancakes about 4-5 inches wide.
  6. Cook until browned, about 3 minutes each side. Repeat until no batter remains.

To assemble the tacos:

  1. Spoon apples and sausage onto pancakes and form into taco shape. Drizzle with maple syrup and serve.
