  • 1/2 Piñata® apple, diced
  • 3/4 c milk
  • 1 large egg
  • 1/4 c maple syrup
  • 1/4 c pumpkin puree
  • 1 1/2 c oats
  • 1/2 tsp baking powder
  • 3/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp vanilla
  • 1/8 teaspoon salt
  • 1/4 c pecans

Instructions

  1. Preheat the oven to 350°F, and spray 6 cups of a muffin pan with cooking spray.
  2. Whisk together the milk, egg, maple syrup, and pumpkin puree.
  3. Stir in the oats, baking powder, spices, vanilla and salt.
  4. Stir in the apples and pecans.
  5. Divide the mixture between the 6 muffin cups. Bake for 25 minutes; let cool slightly and then remove.
  6. Store in the fridge all week for easy reheating!

Instructions

  1. Preheat the oven to 375°F.

Instructions

  1. Dice the apple. Then, grind up 3/4 cups of the oats to a fine powder.
  2. Add the lemon juice, walnuts, flaxseed, spices, salt, vanilla, and peanut butter. Blend until combined.
  3. Add the 1 1/4 cups of oats and pulse lightly to combine.
  4. Scrape the mixture into a bowl, and stir in the raisins.
  5. Roll the mixture into balls, and store in the fridge for up to three days.
