This cous cous recipe is a great way to enjoy this summertime treat!

Instructions

  1. Chop the apricot (unpeeled) into very small pieces and set aside.  
  2. In a saucepan with a well fitting lid, bring the apple juice to a boil.    
  3. Add the butter.
  4. Stir in the cous cous, and remove the pan from the heat.  
  5. Cover and let sit for about 7 minutes.  
  6. Fluff with a fork, and stir in the salt and allspice. Serve warm.
