Chicken, Brie and Cherry Compote Sandwich

Ingredients

  • 2 artisan bread rolls, sliced in half lengthwise
  • 8-10 ounces rotisserie chicken (or cooked chicken breasts)
  • 1/4 – 1/2 cup fresh baby spinach or arugula
  • 1/4 cup cherry compote
  • 4-6 ounces creamy, spreadable brie

This sandwich is the perfect balance of flavors, textures and color - with the cherry compote being the literal cherry on top.

Instructions

  1. Lightly toast the bread until crisp on the outside but soft on the inside.
  2. Divide the chicken evenly between the bread, then top with the spinach or arugula.
  3. Top each sandwich with the cherry compote (it will be a bit messy).
  4. Spread the brie evenly across the top of each slice of bread, then gently form the sandwiches. If desired, slice in half crosswise.
