Easy Cherry Crisp

Ingredients

  • 6 cups cherries
  • 1/2 cup granulated sugar
  • 3 tbsp flour
  • 1/2 tsp almond extract
  • 1 1/2 cups quick oats
  • 3/4 cup brown sugar
  • 1/4 tsp salt
  • 2 1/2 tsp cinnamon
  • 1/2 tsp cardamom
  • 1/2 cup butter

This cherry crisp is a low-sugar spin on the American classic.

Instructions

  1. Preheat oven to 375°F.

For the filling:

  1. Pit six cups of cherries and place into mixing bowl. Add sugar, flour, and almond extract.
  2. Mix thoroughly and smash cherries with spoon to help them cook faster. Split cherry filling amongst three buttered 4in. ramekins.
  3. Bake for 25 minutes at 375°F.

For the topping:

  1. While the cherry filling is cooking, make the topping.
  2. Add oats, brown sugar, salt, cinnamon, cardamom to a mixing bowl. Mix with spoon.
  3. Pour melted butter over oat mixture. Mix until all ingredients are incorporated.
  4. Top the half-done cherry mixture with oat topping and bake for another 25 minutes at 375°F.
  5. The crisp is done when fruit is bubbling and oat topping is light brown.
