- 1/2 cup vegetable or canola oil
- 2 tbsp diced shallot
- 1 tbsp dijon mustard
- 1 tbsp honey
- 1 tbsp fresh lemon juice
- salt and pepper to taste

Instructions
- Place all ingredients in a blender and process until smooth.
- Cover and refrigerate extra dressing, shaking to blend again before using.
