  • 1 tsp baking soda
  • 1/2 tsp kosher salt
  • 1/2 tsp ground cinnamon
  • 1 1/2 cups milk, room temperature
  • 1 egg, room temperature
  • 3 tbsp melted butter
  • Maple syrup, for serving

Instructions

  1. In a large skillet, brown the sausage over medium heat until dark brown and crispy. Drain and set aside.
  2. In a large skillet over medium-low heat, add the apples, water, brown sugar, and cinnamon. Cook, stirring occasionally, until the liquid has thickened and apples are soft, 5-8 minutes. Remove from heat and set aside.
  3. Make the pancake batter by whisking together the flour, sugar, baking powder, baking soda, salt, and cinnamon. Create a well in the middle and add the milk, egg, and melted butter. Whisk until no longer lumpy. The mixture should be thick but pourable, add more milk if needed.
  4. Set a large skillet over medium heat. Grease with nonstick cooking spray. Spoon about ⅓ cup of the batter into pancakes about 4-5 inches wide. Cook until browned, about 3 minutes each side. Repeat until no batter remains.
  5. To assemble the tacos, spoon apples and sausage onto pancakes and form into taco shape. Drizzle with maple syrup and serve.
