Pear Gin Fizz

I love it when a cocktail is seasonal and festive. This Pear Gin Fizz recipe is perfect for the Fall, while pears are in season, and would make for a festive drink to celebrate the holidays with!

The star ingredient of this beverage is the pear simple syrup. If you’ve never made your own simple syrup, it’s quite easy. All you need is equal parts sugar and water, bring to a light boil, and then let cool to room temperature. For a flavored simple syrup, you just toss in your other flavors – think herbs, produce, spices, etc. This syrup calls for chopped pear and fresh rosemary – it’s sweet and subtly herbaceous. The rosemary also gives it those festive holiday vibes!

The fun part about this recipe is you can save the leftover pear as a topping for something delicious – think pancakes or waffles, oatmeal, yogurt, cottage cheese, or ricotta toast. This week, I placed some of the pears on top of pumpkin oatmeal for a touch of sweetness and extra Fall bonus points.

If you’ve never had a gin fizz before, you’re in for a treat. I love its characteristic fizz – the frothy consistency on top is such a delight as you take your first sip. And that silky foam is all thanks to the egg white. Can’t handle the idea of an egg in your drink? How about aquafaba? That’s right, the leftover liquid you drain from a can of chickpeas, turns out, has the same ability to create a foam. I’ve tested it both ways and I have to say that the foam is on point either way.

The key though to getting that gorgeous silky foam is doing a dry-shake of all the ingredients first, which simply means shaking all the ingredients without ice. The warm temperature helps to build the foam, and then you can add ice for that final shake to ensure your cocktail is refreshingly cold.

Ingredients

  • Pear Simple Syrup
  • 1 cup water
  • 1 cup sugar
  • 2 Stemilt Bartlett Pears, chopped (about 1.5 cups)
  • 3 sprigs fresh rosemary
  • For the Cocktail:
  • 2 ounces gin (or ¼ cup)
  • 3/4 ounce lemon juice (or 1 1/2 tablespoons)
  • 1 ounce pear simple syrup (or 2 tablespoons)
  • 1 egg white (or 2 tablespoons aquafaba)*
  • Ice
  • Soda water
  • Optional: rosemary and pear slice for garnish

Instructions

For the pear simple syrup:

  1. In a small saucepan, add water, sugar, pear, and rosemary over medium heat, and bring to a light boil, stirring occasionally, until sugar is dissolved.
  2. Remove from heat and let sit until cools to room temperature (about 60 minutes).
  3. Strain syrup, discarding the rosemary and pear, or saving the pear for a topping for oatmeal, yogurt, pancakes, etc.
  4. Transfer the simple syrup into a glass jar and store in the refrigerator for up to 3 weeks.  

For the cocktail:

  1. In a cocktail shaker, add gin, lemon juice, pear simple syrup, and egg white (or aquafaba) and shake vigorously for about 15 seconds.
  2. Add ice to cocktail shaker and shake again until cold, about 30-60 seconds.
  3. Strain drink into glass and fill to the top with soda water.
  4. Optional: Garnish with a pear slice and sprig of rosemary.

Notes:

  1. Consuming raw or undercooked eggs may increase your risk of foodborne illness.
  2. Aquafaba is the liquid leftover from canned chickpeas and is a vegan substitute for the egg white.
