Red, White & Blue Sweet Cherry Bites


Simple, delicious, patriotic little pops of fresh fruit flavor organically delivered at the end of a graceful stem… sweet perfection!

There’s really no need to improve upon a beautiful, ripe Stemilt cherry. Yet… when surrounded by amazing fireworks, festive gatherings, and bountiful picnic offerings it seems only fitting to glaze a few luscious cherries with just a bit of white chocolate and tip them lightly in blue candy crystals to simply raise a hand (and hat) to the occasion.

Red, White and Blue Sweet Cherry Bites are simple, elegant little bursts of fresh flavor… tree-ripened fruit dressed for the revelries of the day in all their glory.

The beauty of these fresh little cherry bites is they are simple and easy to prep… whether you choose to pit them or not. If pitting is your preference, simply position your pitter just behind the stem and angle down through the center of the fruit to exit the pit at the opposite, lower front of the fruit. This way you retain the beauty of the fruit’s stem. The lower (exit) hole will be covered by the icing and candy sprinkles (if any fruit is still “hinged” upon exit of the pit, simply press that area back into place… this will help fill the void left after the pit exits); the upper (entry) hole can be partially masked by icing. (The cherries photographed for this preparation were all pitted.) IF you choose to dip and tip these bites without pitting your cherries, simply let your guests know to be aware of the pits. If you plan to enjoy these little beauties immediately, either preparation works. If you plan to set the cherries aside for a few hours before serving, then it is best NOT to pit them… in order to preserve a fresher appearance.

  • 1 lb fresh Stemilt cherries
  • 6 oz mini white chocolate baking chips (about 1 cup)
  • 2 tbsp vegetable shortening
  • 1/3 cup dark blue sanding sugar

The beauty of these fresh little cherry bites is they are simple and easy to prep.


  1. Heat white chocolate and vegetable shortening in a double boiler over medium high heat. (Create a double boiler by placing a glass bowl over a pot filled with 1 to 2 inches of water. The water, once boiling, should not touch the bottom of the glass bowl.) Using a wooden spoon, stir chocolate and shortening intermittently, until chocolate melts completely and is fully incorporated with shortening. Set aside to cool to room temp.
  2. Meanwhile, pit cherries (if preferred). Pour blue sugar crystal candy into a low rimmed bowl. Working with one cherry at a time, hold cherry by the stem and dip into white chocolate, covering 3/4 of the fruit.
  3. Lift from chocolate and dip a second time. Hold fruit up over bowl for a few seconds to allow excess chocolate to drip away.
  4. Transfer fruit to sugar crystals and tip bottom of cherry a few times, until nicely coated. Place on a wax paper- or parchment-lined baking sheet to set. Continue with remaining cherries.
  5. Serve immediately. (Pitted cherries should be served once prepped; non-pitted cherries will keep nicely in the fridge for a few hours.)
