I graduated from Washington State University (Go Cougs!) with an English degree. I have always loved to write and I have taken that passion and merged it with my some of my other passions – food, exercise, and health.

Although I try to live my healthiest, I STRONGLY believe that life is a working balance, and it’s important that everyone indulges from time to time. And this is one of those times.

Nothing says comfort food like cinnamon, apples, and a savory crust. At least in my house anyway. Whenever my husband and I are craving something sweet, we usually turn to some type of baked good as a dependable solution to cure our salivating taste buds.

One easy and delicious recipe that always fits the bill is Apple Walnut Cake. With the divine flavor of cinnamon, the slight crunch of the walnuts, and the scrumptious bite of fresh apples (Pink Lady® in this case), you can’t go wrong with any part of our adaptation of this cake from Tastes of Lizzie T. And another added bonus: it is easy to make.

This apple walnut cake would be an excellent addition to an Easter menu, either for brunch or dessert after an early dinner. Whether you are enjoying a piece with a cup of coffee late morning or you are savoring it in the early evening accompanied with a glass of cold milk, I consider this recipe a win-win for everybody’s recipe book.

Ingredients

  • 3 eggs
  • 1 cup white sugar
  • 3/4 cup brown sugar
  • 1/2 cup canola oil
  • 1/2 cup applesauce, unsweetened
  • 1 tsp vanilla
  • 2 cups all-purpose flour
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 5 heaping cups, cored and chopped Pink Lady apples
  • 1 cup chopped walnuts

This scrumptious Apple Walnut Cake is a the perfect dessert for anyone craving something savory with a little bit of a crunch. Apples, walnuts and a pinch of cinnamon are the perfect combination of salty and sweet.

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a medium-size bowl, blend together the eggs, sugar, oil, apple sauce and vanilla until creamy.
  3. In a separate bowl, sift together the flour, baking soda, cinnamon and salt.
  4. Add the flour mixture to the egg mixture and mix until well blended. Fold in the apples, then the walnuts.
  5. Spray a 9x13 pan with cooking spray. Pour the batter into a 9x13 pan and spread evenly.
  6. Bake for 35-40 minutes or until cake is cooked through.
  7. Allow the cake to cool and then sprinkle the top with powdered sugar.
