Have you ever tried baking with chickpeas? It sounds strange at first, but these versatile little gems are not just for hummus! Chickpeas can be used in a variety of dishes, including dessert (like this chickpea cookie recipe). They are naturally great binders, and blend into a smooth, creamy base – making both flour and eggs unnecessary, which is why they can be found in a lot of vegan and gluten-free recipes. Even if you’re not vegan or gluten intolerant, chickpeas create a nutritious base for this gooey apple snickerdoodle skillet cookie for two!

What’s more romantic than digging into a warm mini dessert made just for the two of you? Studded with Stemilt Pink Lady apples and melty white chocolate chips, and sprinkled with the signature cinnamon sugar topping, this apple snickerdoodle skillet cookie is perfect for digging into with your significant other, especially topped with a scoop of vanilla ice cream!

To make this skillet chickpea cookie recipe, simply blend the dough ingredients in a food processor, stir in the apples and white chips, spread in a mini skillet, and top with cinnamon sugar before baking. It’s incredibly easy. Even better, it’s made with better-for-you ingredients, like chickpeas, apples, maple syrup and cashew butter. So you can enjoy it year-round, not just on Valentine’s Day! If you prefer to make a vegan version, simply use vegan white chips and coconut sugar or raw cane sugar for the topping.
