Clafoutis Recipe for Any Occasion

We asked our Crisp Collaborator Tracy Shaw to help us recreate a delicious French dessert using our Stemilt dark-sweet cherries, and she didn’t disappoint! This cherry clafoutis is a beautiful, yet simple cherry dessert. Prepped in under 15 minutes, this summer dessert is perfect for celebrating any occasion.

What do I love about summer…Oh let me count the reasons! Now that my kids are older, I don’t have to worry about really keeping them entertained, they just pop into my office and chat with me and make sure I take breaks from work to eat and give me love 🙂 So, summers for me are for enjoying the sunshine, sleeping in a little, going swimming, going for bike rides, getting in a little family travel and all that beautiful fresh summer produce.

I just loooove summer produce. When the weather starts to get warmer we see more and more beautiful seasonal produce hitting the shelves at our favorite retailers and the farmer’s markets. We start to see peaches, then it’s the huge bins of watermelon, then it’s all those gorgeous berries, then it’s CHERRIES. Those beautiful bags filled with those sweet red little bites of heaven just call out to me. I will usually buy cherries, bring them home, rinse them and toss them in a bowl for easy snacking but Stemilt challenged me with a little baking. Which I gladly accepted.

Now, I will openly admit that my daughter is a better baker than I am. Something about having to be specific sometimes throws me off, I am kind of an “eye-baller” when it comes to some ingredients…or “sure, go ahead and add that in”. That doesn’t always work with baking. So, I am happy to report that this Cherry Clafoutis recipe is not only easy to make and tastes great, but it’s also easy to follow the steps. What is clafoutis?

Clafoutis is kind of like flan and a pancake in one. It is a semi-sweet dessert, but I also enjoyed a slice for breakfast with my coffee. The sweetness really comes from the fruit since you don’t add a lot of sugar.

How do you pronounce clafoutis?

You will find it also spelled clafoutis, and the American pronunciation is “kluh·foo·tees”.

What temperature should clafoutis be served at?

You can serve your cherry clafoutis warm, cold or at room temperature. It’s good any way you serve it! Be sure to store leftovers in an airtight container in the refrigerator.

Can you freeze clafoutis?

Technically, yes, you can freeze cherry clafoutis but I don’t recommend it. Fresh cherries (or any berry) sometimes get mushy when frozen, then thawed when in a dessert.

Can you use other fruit in clafoutis besides cherries?

Sure can! Cherries are typically used in this easy dessert recipe, but feel free to try other stone fruit or in-season berries.

Ingredients

  • 2-2 1/2 cups Stemilt dark-sweet cherries, pitted
  • 1 tbsp of butter melted
  • 1/2 cup all-purpose, unbleached flour
  • 1/4 tsp of salt
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs, room temperature
  • 2/3 cup 2% milk, room temperature
  • Confection sugar for dusting

A traditional Clafoutis is a French custard dessert, but this one includes Stemilt dark-sweet cherries.

Instructions

  1. Preheat oven to 375 degrees.
  2. Add the butter to the pie dish and watch while melts, then remove it. Use a pastry brush to spread the butter across the pie dish.
  3. Add the flour, salt, and sugar to a medium mixing bowl and stir until they are fully blended.
  4. Add the eggs and vanilla to the dry mix, and stir until smooth.
  5. Slowly add the vanilla and milk to the batter, and stir until very smooth.
  6. Blanket the bottom of the pan with fresh cherries, and then pour the batter across the top.
  7. Bake for 35-45 minutes, or until golden brown and cooked all the way through. Once fully cooked, remove it from the oven and allow it to cool to room temperature before dusting with sugar.
  8. Serve warm with whipped cream or ice cream.
