Prep Your Apples Ahead of Time

Good news: these savory stuffed baked apples can absolutely be made ahead. Stuff the apples and wrap with foil in the baking dish and refrigerate until about an hour before you’d like to serve. Then just follow the baking instructions and enjoy. If you do this and want to avoid the apples from browning, just rub a little lemon juice onto the flesh of the apples before stuffing.

Ingredients

  • 4 medium Stemilt apples
  • 1 cup vegetable broth
  • 1 cup water
  • 1/2 cup wild rice
  • 1/4 cup quinoa
  • 2 tbsp olive oil
  • 1 cup finely chopped shiitake mushrooms
  • 1/4 cup finely chopped red onion
  • 1/2 cup crumbled goat cheese
  • 1 tbsp chopped fresh sage

Instructions

  1. Bring broth and water to a boil in saucepan. Add wild rice, cover, reduce heat to medium-low, and cook 50 minutes. Stir in quinoa, and cook 20 minutes more, or until most of water is absorbed.
  2. Preheat oven to 350 degrees F.
  3. Add olive oil to a skillet over medium heat. Add mushrooms and onion and cook 5-7 minutes, stirring occasionally. Stir in sage and wild rice/quinoa mixture and increase heat to medium-high and cook until liquid has evaporated, 2-3 minutes.
  4. Remove from heat and stir in goat cheese.
  5. Halve apples through stem and scoop out core and seeds, leaving 1/2-inch wall. Fill apple halves with 1/3 cup rice/quinoa mixture.
  6. Fill a glass baking dish with 1 cup water, add the apples, and cover tightly with foil. Bake 45 minutes. Remove the foil and bake an additional 15 minutes or until apples are soft and tops are beginning to crisp.
