These Apple Cinnamon Crunch Bagels are made loosely off the Panera Bread cinnamon crunch bagels, but we turned them vegan! By swapping regular Greek yogurt for vegan Greek-style yogurt and swapping regular butter for vegan butter a delicious recipe was crafted. They are also filled with yummy Stemilt Cosmic Crisp apples!

Swap regular butter for vegan butter

With the increase in vegan options, vegan butter can be used a substitute for real butter. Make sure to find a brand that works for you, and that might involve some test runs!

Use a “flax egg” instead of a real egg

Instead of using eggs in your baking recipes, a great vegan swap is to use a flax egg which is where you mix 1 tablespoon flax meal with 2.5 tablespoons of water, let it sit for a few minutes and then add to your recipe instead of an egg.

Plant-based yogurts work well

In a recipe that calls for yogurt (such as this one!), use a plant-based yogurt. This recipe works best with a plant-based Greek-style yogurt since it is thicker than traditional yogurt so that the dough isn’t too sticky.

Search for vegan baking recipes

When looking for a recipe, it is the easiest to search for one that is already vegan so you don’t have to figure out which ingredients to swap. Tips for Making Homemade Vegan Bagels

Bagels sound like they can be difficult to make but when you skip the boiling and yeast, it makes them a lot easier and quicker to make. Apple Cinnamon Crunch Bagels are full of flavor with a brown sugar and cinnamon topping and delicious diced Cosmic Crisp apples throughout. They’re lightly crispy on the outside and chewy on the inside- just like a bagel should be. Smeared with vegan cream cheese, these make the best breakfast or snack.

Here are a few tips to making homemade vegan bagels a regular occurrence:

  • Baking your bagels on a baking mat or parchment paper makes cleanup a breeze and helps your bagels not stick.
  • The reason you don’t need yeast in this recipe is thanks to the homemade mixture of self-rising flour- flour, baking powder and salt.
  • Using white-whole wheat flour works really well because it adds fiber and nutrients to the bagels but bakes very similarly to all-purpose flour.
  • Depending on the brand of yogurt you use, you may need a little extra flour if the dough is sticky.
  • Do not overmix the dough.
  • Skip using regular plain yogurt- your best results will be with Greek yogurt since it is thicker and has less liquid.
  • Make as many bagels as you like. You can double or triple this recipe and freeze the extras.
  • Leave plenty of room on the pan because the bagels will expand as they bake.

Typically, people don’t think bagels have a lot of nutrients, but these bagels are actually quite nutritious! They are rich in protein from the whole-wheat flour and the yogurt. Vegan Apple Cinnamon Crunch Bagels

Ingredients

  • Bagel
  • 2 cups white whole-wheat flour + about 1/4 cup more for rolling out dough
  • 4 teaspoons baking powder
  • 1 1/2 teaspoons kosher salt
  • 2 teaspoons cinnamon
  • 3 tablespoons brown sugar
  • 1 3/4 cups vegan vanilla Greek-style yogurt
  • 1 cup finely chopped Stemilt Cosmic Crisp apples
  • Topping
  • 2 tablespoons vegan butter
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon

Apple Cinnamon Crunch Bagels require no boiling or yeast! The bagels are vegan, baked in the oven and ready in 30 minutes- this recipe makes a dozen bagels.

Instructions

  1. Preheat the oven to 375 degrees F. Place a baking mat or parchment paper on a baking sheet. Spray with nonstick spray.
  2. In a large bowl, mix together the flour, baking powder, salt, cinnamon, brown sugar, yogurt and apples. Mix well. Mixture may be crumbly.
  3. Dust the work surface with flour and place the dough on top of a floured surface. Knead the dough about 15 times until the dough is combined and not sticking to your hand. If dough is sticky, add more flour until it is no longer sticky.
  4. Divide the dough into 12 balls. Roll each ball into ropes that are about 3/4 inch thick and join the ends to form your bagels.
  5. Bake bagels in the oven for 10 minutes. Meanwhile, mix together the brown sugar and cinnamon in a small bowl. Melt the butter in a separate bowl.
  6. Remove the bagels from the oven and brush with butter and sprinkle with cinnamon sugar.
  7. Bake for another 5 minutes until bagels are cooked through and lightly browned.
  8. Top with vegan cream cheese for extra deliciousness!
  9. Stores well in the fridge for up to 5 days. Freezes for up to 3 months.

If you're not following a vegan diet, feel free to use regular Greek yogurt and regular butter.
