Top 5 Summer Salad Recipes
When my diet starts to revolve around burgers, BBQ, slushies, cocktails, and ice cream in the summer months, that’s when I know it’s time to pull out those staple salad recipes to freshen it up.
It truly has been an odd start to summer for us Washingtonians, barbeques and evening pool parties are just over the horizon (I hope,) but we’ve hardly begun establishing our indulgent summer pallets. It must be a sign that it’s a good time to find our favorite salad recipes for when the heat does hit, and for when we need a refreshing change of simple, delicious, and vegetarian-friendly options.
Here Are Our Top 5 Vegetarian Summer Salad Recipes
Spiralized Apple Salad – This is no boring Caesar salad (no hate to Caesar salads, they’re a go-to of mine most time,) this is a flavorful creation of leafy butter lettuce, spiralized apples accompanied by walnuts and a tasty homemade dressing. The spiralizing of the apples can be a fun way to include your kids in the kitchen and get them excited for a salad that is unique.
Kale and Cherry Salad – Pan-fried Kale is what MAKES this salad. It has all the texture qualities of fresh quinoa, pecorino cheese, and couscous. If you’re looking for a nutritional boost, this dish is packed with healthy ingredients like kale, cherries, and pistachios!
Peach and Arugula Salad – This is a substantial and well-rounded salad with peach, halloumi cheese, and arugula which makes it light, but packed with flavor. Not to mention, it’s a beautiful salad to have an Instagram worthy moment with!
Sweet Cherry Farro Salad – A sweet cherry inspired salad that combines nutty farro with bits of goat cheese which pairs nicely with the heat of the summer. For a full meal, add chicken alongside this salad or you may shred it into the dish.
Peach and Goat Cheese Salad – I might be biased to these peach salads; I’m immediately sold by any salad that has peaches in it! This peach and goat cheese salad has a perfect balance of sweet and tangy flavors from the peaches and homemade dressing. Buttery-candied pecans add an extra crunch and are a cinch to make.
