Apple, Shrimp, and Cauliflower BBQ Skewers

If you’re anything like us here at Stemilt, you think of the year in “food seasons.” We look forward to the different produce that becomes available and the variety of flavors our fruit provides. Top of mind for us, of course, are apple, pear, and cherry varieties, but you can’t forget:

We are now entering one of our favorite times of the year: Grilling Season! 

Skewers are one of our favorite ways to take advantage of sunny days. Not only do they highlight fun flavors, but remind us that more evenings outdoors are on the horizon. They are easy to prepare and add a great mix to the dinner routine. Apples are a lesser-known, but delicious, item that can add a sweet kick to BBQ skewers. We love our Pink Lady® apples because they’re tart and stand up well to the high heat of the grill, but Granny Smith is a great choice too. If you haven’t had the chance to add them to your dinner plans, get ready for a versatile item.

pink lady applesHow to Prepare the Shrimp, Apple, and Cauliflower Skewers:

Toss the shrimp and cauliflower in a smoky, vinegary marinade and let it sit for 2-6 hours. Careful not to let it sit too long: the vinegar in the marinade can “cook” the shrimp. 

Once they’ve had some time to soak up some flavor, you’ll carefully thread 1 shrimp, 1 cauliflower floret, and 1 apple piece onto skewers, repeating until you’ve used up all your ingredients.

You can use metal or bamboo skewers. If you choose to use bamboo, make sure to soak them in water according to package instructions before threading on the ingredients and grilling. This prevents them from burning while cooking.

Grill over high heat for just a couple of minutes on each side, until the shrimp is cooked through. You’re looking for a good char without overcooking your shrimp, so really high heat is the trick here.

BBQ Shrimp, Apple, & Cauliflower Skewers

Ingredients

  • Marinade:
  • 1/4 cup olive oil
  • 2 tbsp soy sauce
  • 2 tbsp tomato paste
  • 2 tbsp light brown sugar
  • 2 tbsp apple cider vinegar
  • 1 tbsp Worcestershire sauce
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 4 garlic cloves, minced
  • Kosher salt and freshly ground black pepper
  • Skewers:
  • 2 Stemilt Apples, cut into 1-inch cubes
  • 1 lb peeled and deveined shrimp
  • 1 head cauliflower, stems removed and cut into florets
  • 1 tbsp lemon juice
  • Barbecue sauce for serving (optional)

Instructions

  1. Mix together all ingredients for the marinade in a large bowl.
  2. Divide between two zipper top bags or tupperware containers.
  3. Add the shrimp to one container and the cauliflower to the other container. Toss to coat.
  4. Place in the fridge and let marinate for 2-6 hours.
  5. When ready to cook, toss the apples with the lemon juice.
  6. Alternating between the three, thread the apples, shrimp, and cauliflower onto skewers.
  7. Preheat a grill over medium-high heat.
  8. Add the skewers to the grill and cook for 5-7 minutes, flipping halfway through, until shrimp are just opaque and pink.
  9. Serve immediately with barbecue sauce if desired.
