It’s still 80 degrees in Wenatchee, WA, but that doesn’t mean we can’t be excited for fall. The upcoming days of cool, crisp air and the crunching of leaves beneath our feet could not come soon enough. One of my favorite things fall brings is the warm, comforting meals that turn chilly October nights into cozy moments of deliciousness.

A couple years ago, I started experimenting with soups. And when I didn’t have a can of Campbell’s, I opted for making my own. My favorite soup to make was a fresh tomato basil to go along with a crisp grilled cheese on sourdough. I thought making my own soup would be super time consuming but I was wrong. If you know how to chop up veggies and put them in the oven and blender, then you’re already halfway there.
